Where are Silver Tongue Foods products made?

All silver tongue foods products are made in our craft bakery in Maroochydore on the Sunshine Coast, Queensland.

What is Silver Tongue Foods sustainability commitment?

We care about the planet and believe that sustainability and a concern for the environment should be an integral part of our business. We are therefore continually working to minimise our environmental impact. As a small business this isn’t always easy, but we are committed to doing all we can to make a difference.

SOME OF THE THINGS WE ARE PROUD OF:

• We use ethical, organic and sustainable ingredients in our products from suppliers who share our values. These include Whole Grain Milling flours, Ollsens Salt, Pendelton Estate, Organika Floret, and Basilea .

• The majority of our ingredients and packaging originate in Australia and therefore do not need to be shipped huge distances.
• We aim to produce minimal food waste at our production facility, we do try to use our food waste as animal feed and composting.
• We have worked with our Packaging Partner to optimise our packing standards, significantly reducing the amount of cardboard we use when sending out orders. We use 100% recycled board for our outer packaging, and product packaging.
• We share many people’s concerns about single-use plastics. At the moment, the plastic film we use to seal our product is the best option available. It is completely recyclable.

We are constantly balancing our desire to reduce the use of plastic with the need to maintain our product’s shelf life, as food waste is also a major carbon contributor. We are constantly on the look out for new options and when a viable alternative is available, we will look to switch.

PRODUCT

What is sourdough?

Sourdough is made from the natural occurring yeast and bacteria in flour. Traditionally, the sourdough starter consists of two ingredients; flour and water. There is no yeast, no milk, no oils and no sweeteners. It’s about as natural as you get when it comes to making baked goods.

Are the products organic?

We use all certified organic ingredients. However, Silver Tongue Foods is not Organic Certified.

Are the crackers gluten free?

As our crackers are all made using our signature sourdough starter, we do not currently produce any wheat or gluten-free crackers.

Are the crackers suitable for vegans & vegetarians?

All our crackers & cracker condiments are suitable for vegans & vegetarians.

Do you use palm oil in your products?

No, there is no palm oil in any of our products.

Do you use any artificial flavours or preservatives?

No. All our products are artificial flavour & preservative free. We do not use any ingredients that you would not recognize from your own pantry or garden. Check out the list of ingredients on the Nutrition & Ingredients panel on each product.

Are your flours non-GMO?

Yes, all the flours are hand-picked to be non-GMO, spray-free, and locally sourced.

Do your products contain egg, dairy or yeast?

Our lavosh is made of:
Organic sourdough starter (flour and water which is fermented to create natural yeast), organic flour, organic olive oil, sea salt, garlic (only in the fleur and celery seed range). The crackers are fermented over 48hrs minimum.

Fleur contains local edible organic flowers.

No dairy or egg is used in the lavosh products.

How should I store your products?

Always store our crackers in a cool and dry location. Once opened, store in an airtight container. We like to store ours in the fridge as we live in a warmer area.

Preserves and jams can be stored in the cupboard until opening, when they should be stored in the refrigerator.

Why do my crackers taste a little different than my last packet?

Because we use seasonal, preservative-free ingredients with traditional methods and no stabilisers, there can be some slight changes in the flavour of our products from batch to batch.

But its just a cracker?

No. We are more than just a cracker. Our Silver Tongue Foods cracker has a multitude of application i.e. can be used during breakfast, lunch or dinner. Inspirational recipes will be provided on our website & social media as well as recipe cards for point of sale from time to time.

Fleur

Will I always get the same edible flowers in Fleur?

No. As we only use edible flowers that are in season there will always be a new variety that is dependant on seasons and availability from our supply chain.

Are the flowers safe to eat?

Yes. We only use edible organic flowers sourced from our suppliers on the Sunshine Coast. All our suppliers are spray free and organic.

My cracker is not perfectly cut?

Although we do try to cut each cracker exactly the same, each cracker is hand cut and as such there is variation in shape/size, however this does not impact on the taste.

My crackers vary in thickness?

As the crackers are small batch there will be a slight variation in thickness.

My cracker tastes ‘cheesy’/ tangy?

Congratulations! You have just experienced the magic of sourdough, as our crackers are small batch there may be a slight variation in the ‘tang’ from batch to batch.

How should I store the crackers?

The crackers should be stored at room temperature, out of direct sunlight. Once opened the crackers should be consumed immediately or stored in an airtight container.

What sea salt do you use on the crackers?

We only use Ollsens sea salt. The smoked sea salt cracker utilises Ollsens smoked sea salt ‘red gum’.

Do the crackers contain garlic?

Only Fleur and Celery Salt contain garlic.

Cowboy Kisses

What are Cowboy Kisses?

These are a sweet pickled jalapeno, mixed with Silver Tongue Foods spice blend.

Is there a variation in jalapeno chilli heat?

As we only work with natural ingredients there will be a variation in heat from batch to batch. 1 in 10 jalapenos are very hot.

Some of my jalapenos look red?

Some batches will have a mix of green and red jalapenos. This is nothing to be concerned about, the red jalapenos are more mature and usually have a deeper flavour.

Some of my jalapenos have ‘stretch marks’?

A flavoursome jalapeno will have stretch marks, this is nothing to worry about, and is a part of the jalapeno growth process.

Are the jalapenos sourced locally?

Yes. We source our jalapenos from a regional grower in Victoria.

Raspberry & Jalapeno Jam

Do you use real fruit in the Raspberry & Jalapeno jam?

Yes. We use REAL raspberries, sugar, and lemon (pectin).

I can’t taste the jalapeno in the raspberry jam?

The raspberry & jalapeno jam is NOT a chilli jam. The jalapeno usually comes on at the end of the palate. For those who consume a lot of chilli this may not carry much heat however, it does complement the fruity notes of raspberry.

Pickles

Does Silver Tongue Foods make all the pickle products or are they made by a contractor?

We do not contract out any production. We make everything in our own facility including the cracker condiments.

Can you eat the brine in the jar?

Yes! With just a little bit of creativity you can use everything in the jar.

Are the pickles fermented?

No, they are preserved using a vinegar based brine.

Why do you use sugar in your pickles?

We use a marginal amount of sugar because it helps to create a roundness with the salt and vinegars which makes those flavours a little less harsh and pronounced.

What vinegar do you use in your pickles?

We use a high grade preserving vinegar that is sourced locally from Queensland.

What oranges do you use in the spiced orange?

As we only use fruit that is Australian the spiced orange can either be Naval Oranges or Valencia.

Are the oranges ‘spicy’?

The spice mix in the pickled orange does not produce ‘heat’. The spices that are used are ‘warming spices’.

Do you use real cinnamon in the spiced orange mix?

Yes. We use only real cinnamon sticks and not cassava bark.

Is there alcohol in the spiced orange?

Yes. However, during the cooking & preserving process the alcohol is evaporated.
